Cooking Like Crazy

Hello everyone!

Now that I’m home, I can actually bake and cook with no restrictions. I’ve always enjoyed cooking and the novelty of being able to again hasn’t worn off. I don’t even mind doing the dishes. Although, if I cook usually someone else does them. I wanted to share some of the foods I’ve made with you this week and if you want a full recipe just let me know.

I think I’ll only share recipes if asked as that doesn’t seem to interest people. The pictures aren’t the ones I made, as I don’t usually take pictures of my cooking! Anyway, it’s been a busy week so I felt like sharing something light with everyone.

I went crazy and ate a lot of El Paso favorites during the weekend. I tried to get back on track and make slightly healthier meals. Not everything I’ve made is healthy. Some things were just delicious 😋 I’m trying to find a nice balance. I want to indulge, but I also don’t want to gain the COVID 15 while in quarantine.

Any way, here’s what I cooked this week for my family. I missed this!


1. Homemade burgers 🍔

I’m not a huge burger fan! Burgers are always crowd pleasers though, and they’re easy to make.

My burgers consisted of just ground beef, hot sauce, and cranberry juice. It sounds like an odd combination, but it worked! Then I just formed the patties and grilled them. My brother came to visit us this day and he was hungry. These were ready to go in less than an hour so he didn’t have to wait hungrily for the food to be ready.

My family loved these. Like I said, it’s hard to go wrong with burgers. You can substitute the hot sauce for bbq sauce or ketchup if you don’t like things spicy. I live for that spice, though.


2. Peanut butter banana brownies

This is obviously to indulge a sweet tooth. I made this because I had been craving brownies for a while now.

They were actually super easy to make as well. Brownie recipes are hit or miss, but this was incredibly easy. They were also not too sweet. Most of the taste came from the bananas in case that’s not your thing! My mom isn’t a chocolate fan, but she actually liked these a lot! I’ll let you be the judge.

The recipe made 8 servings and each serving was 395 calories.


3. Garlic herb roasted potatoes 🥔

I made these potatoes once in New York and Orlando fell in love with them. After that he continued to buy potatoes so that I would make them over and over again. Needless to say these are becoming my second specialty behind chicken wings! My mom loves potatoes so I wanted to make these for her now that I’m here. She loved them as well. I know I’m saying that a lot, but it’s true. My family tends to be honest with me if they don’t like something!

Okay, one more thing.


4. Grilled shrimp tacos 🌮

I love seafood! It’s also hard to go wrong with tacos. It’s also spring and lent so the perfect excuse to make these! I love these. They’re flavorful and filling. I want more. I think you should make them. They’re tacos!

I find cooking to be therapeutic!

I know having to cook all the time might take the fun out cooking for a lot of folks! I haven’t had the chance to cook like this in a while so I’m enjoying the process. It helps that I’m not cooking all day every day. My mom and Orlando also cook so we take turns! I’m so happy to be home.
